The new Trota Oro web site is a blog: the final version, which has been on-line for a few days, is the result of our company’s decision to innovate communication, through which we wish to continue informing more and more people of the quality of our fish products.
So why not register now for our newsletter! Besides presenting the company, we want to highlight the profound link between our work and the territory where our business started. Naturally, special attention is paid to our products (smoked and marinated Arctic charr, smoked and marinated trout, trout eggs) but also to the processing (filleting, salting, marinating and smoking) which ensures their high standard of quality.

In honour of our shared origins and above all of the hospitality of his stand, I wish to dedicate the first part of my coverage of the Salone del Gusto 2006 to Vittorio Leonardi and his company: Trota Oro is a small Trento firm founded in 1988 for the production of smoked trout obtained from an ancient traditional recipe which ensured unique characteristics and top quality. The company later extended its range of processed products: fresh trout fillets, trout marinated in aromatic vinegar, fresh Arctic charr fillets, smoked Arctic charr, and trout eggs. All the products came from fish farmed in the clear cold waters of the Adamello Brenta Natural Park and processed using only the most classical artisan methods, with absolutely no colorants or chemical substances. On the Trota Oro stand at the Mercato del Salone del Gusto we talked to Vittorio about many things, including the originality of farming and processing Arctic charr.
